DISCOVERING local culinary history proved to be a piece of cake for one group of kitchen whizzes.

Youngsters on the hospitality and catering course at St Monica's Sixth Form College in Bury Old Road, Prestwich, have been learning about the Bury simnel cake and made a chocolate version especially for Easter.

One of the students, Tayla Howson, said: "It is also known as fruit cake and was originally associated with Mid-Lent Sunday when the traditional Lent fast was relaxed so people could eat rich foods and add variety to their diet.

"In the 19th century, servant girls were allowed to bake simnel cakes to take as presents for their mothers on Mothering Sunday.

"Many bakeries still make simnel cakes to keep up the tradition."

The students run their own on-site cafe called Brasserie Monique, which invites members of public to dine at lunchtime on weekdays during term time.
